Because yam exports has become lucrative in Ghana, most of our yam farmers in Ghana has adopted to the use of chemicals, mostly fertilizers which they use exceedingly to grow or produce yams. As a result, the traditional taste of Ghanaian yam especially "Pona" is lost. Our friends from sister African countries like Nigeria Togo Burkina, Ivory Coast, etc ,and those from the Caribbeans have all been complaining about the loss in taste of Ghanaian Yams and its durability.One notices colors on the yam when the peel is removed. When cooked, it does not smell or taste like yam. It's high time the ministry of Agriculture address this abnormalities if Ghana wants to be a leading yam exporter.

Kaakyire it's true, as if you're here with me when I cook yam. After peeling it you will see some violet colour on the yam. This is very bad for Ghana. That's greediness and I hope they will change.

If the problem has to do with excessive use of fertilizer, then farmers ought to be educated to stop using artificial fertilizer. They should use natural fertilizer like compost, cow dung and black soil.

I would also suggest that MOFA examine the export processes, the way yam exports are handled. It may be that yam is not kept in conducive conditions.

Additionally, I am sure that the culprit is not the farmer nor anyone not planting nor exporting the right specification of yam. It may be your travel time. Find better means of getting the yam here on time and stop delaying the export.
