What is confounds me is this recent association of the dish with Senegal. As a child I was told the dish was from Sierra Leone brought by the Wollof from Sierra Leone to Ghana. For those who don’t know, the Gold Coast (precursor to Ghana), Gambia, Sierra Leone and Nigeria were administered as one colonial territory : British West Africa. There were Gold Coasters going to all these countries, some drafted by the colonial government to work in the colonial administration. So there was a community of Sierra Leonians that brought over Jollof Rice. There was very little contact with Senegal, same as it is today. Senegalese rice pilaf or “Chebu Jen” is fish-based and sometimes a bit soupy. Ghanaian jollof has always been meat-based, as in Sierra Leone.

The coastline of Senegal is rich in all manner of fish and they have red meat all across the country too. This advantage contributed to the people eating wollof rice on daily bases. Of course, the word 'wollof'got corrupted to 'jollof'. Travel to Dakar if you are a gourmand and you want to remain there till the end of time. Jollof rice is good and nutritious and so the average height of a Senegalese woman is comparable to that of a man in Ghana. In the same vein, most of the men there are relatively taller than their counterparts in Ghana. Nonetheless, geographical location, culture, race can also influence the way people look.
