It is not as if we don't know too, but just that we refuse to go back to the right route in stead, treading on some "poison" we call food.

Therefore, we will encourage you to do more in the area of research, as much as you can, making sure you keep good records of survey instruments, responses, analyses, etc.
The information you present about "Calcium carbide... to hasten fruits ripening process", is totally new to us.
On checking, we found that "..Calcium carbide is a chemical compound that is industrially used in the production of calcium cyanamide for fertilizer and also in welding..."
That is pretty scary, in Ghana/Africa!
Here is a precautionary note found in the search:
"....After you have purchased...fruit...place it in a bucket/ body of water; if it sinks to the bottom that means it’s naturally mature and fine. However, if it floats that means it has been harvested prematurely and you should not consume it just yet....Wash fruits thoroughly before consuming. Keep under running water for a few minutes to wash the chemicals away....Artificially ripened fruit can be identified by their lack of a uniform colour. For example, artificially ripened mangoes will be green and yellow in patches around the surface..." (Source: www.afromum.com/detect-avoid-fruits-ripened-calcium-carbide-chemical/)
However, in locales where good drinkable water is not available, this may still be a problem!
ITEM: The totality of your essay seems to suggest to us Ghana needs a lot more Public Health experts, some of whom could be experts in Nutrition, as well as any number of health related fields desirable in tropical environments (Medical (Nurses, Doctors), Sanitation, Epidemiology, Technologist, and Lawyers and Housing experts, even, etc.).
THEREFORE, in that environment, it will serve the Ghana community a lot better if the Nutritionists and other "specialists" acquired basic training and skills in related areas, including Research. In that sense, you are on the right track, in our books.
