The Solution is as plain as the nose on our face. The template is already made for us, yet ,we keep doing the same "Nkwaseasem" every year.
Factory Processing (Bean to Liquor)
Cleaning & Sorting: Upon arrival, beans are cleaned to remove debris and sorted by size, quality, and origin.
Roasting: The beans are roasted (typically between 120–150°C) to reduce moisture, sterilize them, and fully develop the cocoa flavor.
Winnowing (Shell Removal): The roasted beans are cracked and passed through a winnower. Lighter shells are blown away, leaving only the inner "nibs".
Grinding & Liquidification: The nibs are ground, releasing fat (cocoa butter) and creating a thick, smooth liquid known as cocoa liquor or cocoa mass.
Cocoa Powder and Butter Production
Pressing: The cocoa liquor is subjected to high-pressure pressing, separating it into two components:
Cocoa Butter: The fat that is filtered and stored in liquid form.
Cocoa Cake: The solid, dehydrated remainder.
Pulverizing: The cocoa cake is broken up and ground into fine cocoa powder.
Chocolate Manufacturing (Mixing & Finishing)
Mixing: Cocoa liquor, cocoa butter, sugar, and milk (for milk chocolate) are blended according to specific recipes.
Refining: The mixture is passed through a series of rollers to reduce particle size, ensuring a smooth, non-gritty texture.
Conching: The chocolate is heated and continuously mixed for hours or days. This process removes unwanted volatile acids, improves texture, and refines the flavor.
Tempering & Molding: The chocolate is cooled and heated precisely to stabilize the cocoa butter, ensuring a glossy finish and good "snap". Finally, it is molded into bars, cooled, and packaged.
