How freezing bread before eating could benefit your health

Freezing freshly purchased bread before eating it could help reduce the rise in blood sugar levels associated with consuming white bread, according to a research into how storage and preparation affect the body's response to starch.

Speaking in a viral video shared on November 7, 2026, a chef advised consumers against eating freshly baked bread, stating that freezing and toasting it could make a difference to how the body processes its starch.

Don’t store bread beyond four days – Baker advises consumers

"The worst way to eat your bread is to eat it once it is fresh, fresh from the oven, fresh from the bakery," he said.

He explained that white bread is largely made of starch, which undergoes structural changes when frozen.

"When the bread goes into the freezer, the starch tightens back up. When it tightens back up and you toast it and you eat it, it goes into your system and part of the starch that you are going to get is what we call a resistant starch," the chef explained.

Resistant starch is a type of carbohydrate that is not completely broken down and absorbed in the small intestine. Instead, it passes into the large intestine, where gut bacteria ferment it.

According to the chef, this process could also support digestive health by providing food for beneficial bacteria in the gut.

"That resistant starch, our bodies are not able to fully absorb it. So it doesn't add up to the sugar levels in your system. Part of that resistant starch also goes to feed the bacteria we have in our guts," he added.

What does scientific research say?

A 2023 study published in Novelty in Clinical Medicine has also found that freezing and reheating white bread could reduce its effect on blood sugar levels.

The researchers also found that freezing bread for three, five or seven days produced similar reductions in blood glucose levels.

The findings support the suggestion that freezing and reheating bread may influence how the body responds to its starch.
