The bible only talks about events that seem important to the authors. There was an important event when Jesus was 12 years, hence, it was recorded. At 33, he started his ministry and it was also recorded. That is the reason for the gap.
Also, the bible never made mention of an apple. Your argument here doesn't really make sense. Relax and read widely, I'm sure you can come up with something better.
